Carolina Cuevas
Meet bilingual PritikinLIVE educator Carolina Cuevas, RD, MS. Her unique background inspired her lifelong commitment to improving nutrition among vulnerable populations. Born in Guanajuato, Mexico, Carolina emigrated to the USA at 12 years old. She earned her BS in Nutritional Sciences at Mount Mary University and her MS from the Medical College of Wisconsin in Global Health Equity. Her research thesis focused on the impact of malnutrition, intestinal parasites, and diarrheal disease among children in Rwanda, Africa. She is dedicated to empowering patients from all walks of life and cultural backgrounds with the tools they need to make heart-healthy choices. She shared, “It has been a remarkable experience to provide optimal nutrition care through lifestyle education and cooking demonstrations to our patients. Their feedback and remarks during my cooking school sessions inspire and motivate me to enhance our healthcare delivery program to help extend their healthspan and contribute to their overall wellness.” When she isn’t working with Pritikin ICR patients, Carolina can often be found writing, strength training, practicing Pilates, or salsa dancing.
